Recipe: Healthier foods for New Years

New Year’s Good Luck Bean Salad
 
What’s in it:
1 can S&W 50% reduced sodium Black Beans
1 can S&W Kidney Beans
1 can Black Eyed Peas
1 red and/or green bell pepper, diced
½ cup chopped cilantro
3-4 chopped green onions
 
Dressing:
¼ cup red wine vinegar or sherry vinegar
1 garlic clove, minced
Salt and freshly ground pepper to taste
2 teaspoons lightly toasted cumin, ground
1 teaspoon Dijon mustard
½ cup veggie broth
⅓ cup extra virgin olive oil
 
 
How to make it:
1. Whisk together all the ingredients for the dressing. Set aside.
2. Stir together all the beans, peppers, and onions.
3. Combine both the mixture and dressing together.
4. Top or combine cilantro in. Serve as a dip with tortilla chips, or on top of a green salad.
 
Spiced Mayan Cocoa Coated Walnuts
What’s in it:
2 tbsp butter 
¼ tsp cayenne pepper 
2 tsp ground cinnamon 
2 cups walnut halves 
2 tbsp granulated sugar 
1 tbsp cocoa powder 
 
How to make it: 
1.      Preheat oven to 250°F 
2.      In a large microwavable bowl, add butter, cayenne and cinnamon. Microwave on high until butter is melted, about 30 seconds. Whip ingredients together to combine. Add walnuts and stir to coat. Sprinkle with sugar and toss to coat walnuts. 
3. Pour mixture onto a rimmed baking sheet. Bake in center of oven for about one hour, stirring about every 15 minutes, until walnuts are a deep golden color and toasted. Sift cocoa over warm walnuts. Let cool. 

“Everything” Bagel Dip
 
What’s in it: 
1 tbsp sesame seeds 
1 tsp caraway seeds 
1 tsp poppy seeds 
½ tsp dried onion flakes  
½ tsp dried minced garlic 
1 pkg cream cheese at room temperature 
1-1.5 cups pureed S&W white beans
vegetable crudités 
bagel crisps or cracker of choice
Instructions 
1.      Combine sesame and caraway seeds in a small pan. Toast over medium heat, about 2 to 5 minutes, or until sesame seeds are light golden and fragrant. Transfer to a small bowl and stir in poppy seeds, onion flakes and minced garlic.   
2.      Place cream cheese in a large bowl and mash until soft. Add pureed white beans and mix until well combined. Reserve ½ tsp of the seed mixture for garnish. Add remaining seed mixture to cream cheese and bean mixture; stir to combine. Transfer to a serving dish and sprinkle with reserved seed mixture.  
3.      Serve with firm vegetable crudités (celery, carrots, cauliflower, broccoli, sugar snap peas, radishes) and bagel crisps or other crackers. 
 

Cody's Recipe
3 cups chopped cucumbers (roughly 2 large cucumbers)
1 cup chopped red bell peppers (roughly half a bell pepper)
2 tablespoons finely chopped fresh oregano (you can also use 1 tablespoon dried instead)
4 tablespoons chopped black olives
1.5 cups of small cubed Colby pepper jack cheese (or any of your favorite cheeses)
½ cup diced red onion
1 16oz can of black eyed peas strained and rinsed
4 tablespoons olive oil (you can also you truffle oil or flavored olive oil for a little kick)
3 tablespoons lemon juice
pepper blend to taste

Throw all parts in a bowl, stir to combine, and add the pepper blend to taste… and could even add a pinch or two of salt as well if you want.
