Sweet Potatoes for Thanksgiving

As part of our staff Thanksgiving show, Executive Producer Jeff shares the recipe he loves for savory sweet potatoes. It's only 5 ingredients and is perfect for people who don't love overly "sweet" sweet potatoes. Browned Butter Boursin Sweet Potatoes Recipe from @theshayspence on Instagram. From Shay Spence @theshayspence on Instagram What you need 5-6 large sweet potatoes 10 TB salted butter Seasoned salt or Cajun seasoning Boursin cheese – garlic & herb Salt/Pepper Optional Topping ¾ C pecans ¾ C panko bread crumbs Brown Butter Boursin Sweet Potatoes 5-6 large sweet potatoe Cut in half lengthwise Put in water and bring to a boil Simmer until tender – about 25 min. Drain and let cool Medium Saucepan – medium heat 10 TB salted butter – cook until dark brown & nutty (6-8 minutes) Add 2 tsp seasoned salt (Cajun seasoning/lawry’s, etc.) Turn off heat Scoop out flesh of sweet potatoes into large bowl Add one 5.2 oz package of garlic & herb boursin cheese ½ tsp salt Add all but 2 TB of brown butter Hand mixer until nice and fluffy Serve as is – top w/ rest of brown butter Or – beat in egg, put in casserole dish – add ¾ chopped pecans & ¾ C breadcrumbs to reserved brown butter Cover with mixture and bake at 375 for 30 min. or until top is toasted & crispy
