Impress at Easter brunch with this easy Swedish Cheese Tart
In Sweden it is traditional to serve Västerbottensostpaj (Västerbotten cheese pie) at crayfish parties, but it is popular all year long. Nordic food expert Patrice Johnson showed us how to make the tart for Easter brunch. Ingredients: 1 puff pastry (thawed), 4 large eggs, 2/3 cup whole milk, 10 ounces Cheddar or Gruyère (grated), 2 ounces Parmesan cheese (grated), 1⁄2 teaspoon salt, pepper, chives or dill for garnish (optional) Directions: Heat oven to 350 degrees. Grease an 8- or 9-inch pie plate. Roll out pastry on floured work surface until thin, then use it to line pie plate. In a large mixing bowl, beat together the eggs and milk. Stir in grated cheese, salt, and lots of pepper. Pour into tart shell. Bake 45 minutes. Garnish with fresh chives or dill if desired.
